Hi, I'm Kimberly...
...and welcome to KimberlyThyme! I live outside Chicago with my husband Tommy and our baby girl Eloise.
I did not grow up learning how to cook. My mom had the mentality that getting food on the table was a job, but not one to be enjoyed. Living on my own in Washington, D.C., I started to venture into cooking and my husband was only too happy to eat what I made. The first time I cooked for him, I made lasagna. I thought he hated it so I did not cook for him again for several months. Finally one day he says “hey why don’t you make that lasagna again? It was great” Dohhh!!!
After that I gained more confidence in the kitchen. Once I started to cook I realized I really enjoy it. There is something about taking a handful of ingredients and transforming them.
Even before cooking I had a passion for baking. You can bet that for any family gathering I am whipping up something scrumptious, be they lemon bars (my husband’s favorite) or a chocolate lava cake (my favorite)!!
On this blog you will find a mix of quick weeknight dinners that use ingredients you probably already have or can easily get from your local grocery store (Jewel Osco anyone?). You will find that I try to make everything gluten free, but everything I make can easily be made non-gluten free.
Also on here you will find baby food recipes that I’ve worked through, our daughter has high end tastes, so we try to accommodate her as best we can.
I’m a Spartan, a Hoya, a midwesterner, and a cook and I hope you enjoy what ends up on my table.
